KETAM LEMAK CILI API RECIPE



HI FRIENDS AND VIEWERS, JUZ LIKE TO SHARE ONE OF MY FAMILY FAVOURITES DISH THATS THE KETAM LEMAK CILI API WITH PINEAPPLES, TASTE AS GOOD AS PRAWNS (UDANG) JUZ HAD HIS FOR DINNER JUZ NOW, SO HERE IS THE RECIPE AND HAPPY COOKING.....

KETAM LEMAK CILI API WITH PINEAPPLES

INGREDIENTS

4 NOS. FLOWER CRAB CUT INTO 1/2 CRUSH THE PINCER
2 NOS. BRUISED LEMON GRASS
2 NOS. DAUN LIMAU PURUT
3 NOS. ASAM SKIN (ASAM KEPING)
3 NO. KALAMANSI EXTRACT JUICE (JUS LIMAU KASTURI)
200 GM PINEAPPLES CUT IN SLICE
300 ML THIN COCONUT MILK
400 ML THICK COCONUT MILK
1 NO. CHICKEN CUBES
1/2 TSP GROUNDED BLACK PEPPER(OPTIONAL)
SALT TO TASTE

GROUNDED INGREDIENTS

15 NOS. BIRDS EYE CHILLIES (CILI PADI)
1 INCH FRESH TUMERIC
GROUND ABOVE ING INTO PASTE

METHODS

IN A WOK ADD IN THE GROUNDED ING WITH THE THIN COCONUT MILK, ADD IN BRUISED LEMON GRASS, LIME LEAVES, CHICKEN CUBES, ASAM SKIN, BLACK PEPPER AND LEAAVE TO SIMMER FOR ABOUT 10 MINS OVER MEDIUM HEAT.
AFTER 10 MINS ADD IN THICK COCONUT MILK AND LIME JUICE AND COOK FOR ABOUT 10 TO 15 MINS AND ITS READY TO BE SERVE WITH PLAIN RICE, U CAN GARNISH WITH CHERRY TOMATOES TOO. HAPPY COOKING......

HOME MADE DONUTS RECIPES



HI TO ALL MY FRIENDS AND VIEWERS..JUZ LIKE TO SHARE THIS SIMPLE AND EASY DONUTS RECIPES, WHILE WATCHING THE SINGAPORE IDOL FINAL...IN MY KITCHEN IS ALSO HAPPENING WITH MY DAUGHTER ENJOY THE SHOW AND MAKING DONUTS TOO, AFTER FRYING THE DONUTS I EATS 4 PCS WITH MY FAVOURITE BLACK COFFEE ....FUYOOOH SHIOK

PLAIN DONUTS

ING A

500 GM TOP FLOUR
11 GM INSTANT YEAST (1 PKT)

ING B

80 GM SUGAR
20 GM MILK POWDER
A PINCH OF SALT

ING C

1 NO. EGG (60 GM)
230 ML WATER

ING D

100 GM BUTTER AT RM TEMP

METHODS

1. MIX ING A,B, AND C BEAT AT MEDIUM SPEED USING K BEATER ABOUT 5 TO 7 MINS, THEN
ADD IN D BEAT AGAIN ABOUT 10 MINS UNTIL DOUGH BECOME SMOOTH.

2. IN THE BOWL SPRINKLE WITH A LITTLE FLOUR LEAVE THE DOUGH TO RISE AND COVER WITH
DAMP CLOTH OR PLASTIC LEAVE FOR ABOUT 30 TO 40 MINS UNTIL THE DOUGH TURNS DOUBLE.

4. PUNCH THE DOUGH AND SPRINKLE SOME FLOUR ON THE WORKING SURFACE ROLL ABOUT 1.5CM
THICK, USE DONUTS CUTTER TO SHAPE THE DONUTS.

5. SPRINKLE SOME FLOUR ON THE TRAY ARRANGE DONUTS AND LEAVE TO RISE FOR ABOUT 30
MINS COVER WITH PLASTIC, THEN HEAT UP OIL AND FRY UNTIL GOLDEN BROWN.

6. WHEN COLD SPRINKLE WITH CASTER OR ICING SUGAR, OR MELT SOME COOKING CHOCOLATE
AND DIP READY DONUTS AND USE ALMONDS NIBS, FLAKES, CHOCOLATE RICE OR SUGAR
SPRINKLES, PEANUT BUTTER OR CREAM CHEESE MAKE DONUTS TASTE GREAT TOO.

Cup Cake Decoration/baking W/shop Sat 12 Dec 09





Really a buzy wk ends, with all my cooking programme and w/shop and on Sat we had the cup cakes decoration with 15 ladies, its a hands on class teach them how to baked the baby cakes,gd snow butter creame with fruit flavour and not too sweet, starter kids for the decoration etc.....and students brought home 12 cuppies decorated by them and sampling of the cuppies and decorated thier own cuppies make the w/shop fun.......

PANDAN BUTTER CAKE

ING : A

250 GM BUTTER
230 GM CASTER SUGAR
1 TBLSP OVALETTE
½ TSP VANILLA ESSENCE
2 1/2TSP PANDAN PASTE(GUNAKAN YG DARI INDONESIA PASTA PANDAN)
2 TBLSP PANDAN KAYA
2 TBLSP CORN OIL OR CANOLA OIL
MIX ALL ABOVE AND BEAT AT HIGH SPEED UNTIL FLUFFY

ING: B
7 NOS. EGGS
ADD TO ING A ONE BY ONE AND BEAT AGAIN UNTIL MIX WELL

ING: C

230 GM TOP FLOUR
2 TSP BAKING POWDER
1 TSP BICARBONATE SODA
MIX ALL ING C AND SIEVE AND MIX TO ABOVE ING…….PLS SEE DEMO

METHODS:

1. PREHEAT OVEB AT 180 , PREPARE 9 INCH BAKING TINS LINE WITH BAKING PAPER AND BRUSHED WITH BUTTER ALL AROUND.
2. ADD THE CAKE BATTER INTO THE TIN AND BAKE AT 175 FOR ABOUT 1 HRS.
3. LEAVE TO COOL ABOUT 2 HRS BEFORE SERVING.
