RENDANG ROLL RECIPE




HI ITS BEEN A LONG TIME, I DID NOT SHARE GOOD RECIPE, SO FRIENDS AND VIEWERS COME AND TRY THIS ONE THE RENDANG ROLLS IT LOOK LIKE SMALL CROISSONTS AND TASTE REALLY GOOD WITH THE MINCE MEAT RENDANG

CHICKEN OR BEEF RENDANG ROLLS

BASIC DOUGH

600 GM FLOUR
20 GM CASTER SUGAR
70 GM BUTTER
½ TSP SALT
310 GM WATER

INGREDIENTS: B

300 GM PASTRY MAGARINE

METHOD: ROLL IN METHODS

1. MIX ING A TOGETHER USING THE K BEATER, TO FORM A SMOOTH DOUGH, SHAPE INTO BLOCK & ALLOW TO REST A FEW MINUTES.
2. ROLL DOUGH INTO A RECTANGLE & COVER ½ THE SURFACEWITH PASTRY MAGARINE, AND FOLD BOTH ENDS, ROLL OUT TO A RECTANGLE, ALLOW DOUGH TO RECOVER.
3. GIVE TWO HALF TURNS, THEN TWO BOOK TURNS WITH THE REST PERIOD BETWEEN TURNS, REST BEFORE USE, PLS SEE DEMO........

CHINCKEN RENDANG FILLING

500 GM MINCE CHICKEN OR BEEF
WASH AND DRAINED

GROUNDED SPICES

10 NOS. DRIED CHILLIES
5 NOS. GARLIC
8 NOS. SHALLOTS
2 “ GINGER
2’’ GALANGAL
2 NOS. LEMON GRASS SHREDDED
2 TBLSP CORIANDER SEEDS
GRIND ALL ABOVE INTO PASTE.......

200GM COCONUT MILK
2 NOS. LIME ELAVES
5 TBLSP COOKING OIL
SALT AND SUGAR TO TASTE

METHODS

1. IN A WOK HEAT OIL FRY GROUNDED SPICES UNTIL FRAGRANT, AND ADD IN THE LIME LEAVES AND AND CHICKEN COOK ABOUT FIVE MINS.
2. ADD IN COCONUT MILK, SALT AND SUGAR AND COOK UNTIL DRY......
3. LEAVE TO COOL BEFORE USE

SHAPE THE DOUGH INTO TRIANGLE ADD IN THE RENDANG FILLINGS, ROLL LIKE CROISSANT, REPEAT PROCEDURE UNTIL FINISH, EGG WASH THEM AND BAKES AT 180 FOR 20 MINS to 30 MIN
